Jack Gumless as the name implies does away with the greatest handicap of jack fruit-its gum. Identified by a farmer of Karnataka, this variety is also called Sompadi Varikka. The arils are firm and white in colour and they are eaten best in the early stage of ripening.Because raw jackfruit or 'kathal' as we call in the Hindi language, makes for a great ingredient to make curries, dry sabzis and lovely pickles too. These days, it is a hot favorite of newly turned vegans or vegetarians too, as it looks and gives a similar mouthfeel as meats. Thus, popular as vegan meat too.
